How does the "lightened" version actually work?

Low Cal Pal looks at each ingredient and suggests lighter swaps — like reduced-fat pecorino or an egg yolk and white blend — that keep the dish close to the original. You'll see the calories saved and how much lighter it is, and you keep any original you prefer.
